Description;
From 40 year old vineyards planted in sandy/silty soils in Florensac, Languedoc, France. The training/pruning is guyot and the cultivation method is sustainable with grassing and ploughing in alternating rows. Cold maceration for 72 hours and alcoholic fermentation for 11 days at a controlled temperature around 24°C. Traditional vatting for 16 days under marc. Pneumatic pressing, the press wines are worked separately from the free-run wines. A small percentage will then be used in the final blend to provide structure and concentration. The wine is designated Pays d’Oc IGP.
Tasting Notes;
A “pleasure” wine that is able to provide substance and aromatic richness. Nice balance for this entry-level wine, meaning it is always a good deal.
Food Pairings;
The wine pairs well with red meat, steaks, lamb and burgers. While Cabernet Sauvignon is considered a red meat wine, then it also pairs well with Aubergine with Parmesan and Mushroom Risotto. Cheese platters are also suitable for the wine. For the vegetarians/vegans it is also great with smoked tofu dishes.
