Description;
The vineyards are planted in sandy/silty soils with an average age of 16 years. A blend of Sauvignon Blanc and Sauvignon Gris, the grapes are harvested in two stages, 7 days apart to play on the blend of two very distinct levels of ripeness. Alcoholic fermentation took place in stainless steel vats for about 16 days at a controlled temperature of between 15 and 18°C. The wines are then aged on fine lees for a few months and finally blended before bottling.
Tasting Notes;
A wine with aromas of grapefruit and boxwood, it delights with its freshness and spontaneity.
Food Pairings;
Ideal for accompanying shellfish and as an aperitif with tapas.
