The winery and vineyards are located in the most southwestern part of the Rueda D.O.P. appellation in the province of Segovia, in the dry region of Northern Central Spain. The province of Segovia has a fabulous historic heritage, with some vineyards surviving despite very low yields. The vineyards guard some of the jewels of the Spanish winemaking heritage, as the “pie franco” (European root) vines, which guarantee the genetic purity of the grape and a high-quality wine, in-fact it’s the Noah’s ark of the Verdejo grape.
The winery owns 30.5 ha of vineyards consisting of several plots, some of which are very old. The vines are planted in sandy soils en vaso, which makes it possible for many of them to be un-grafted, in fact some of the vines are over 120 years old and pre phylloxera. The yields are very low with each vine producing less than 1.5 Kg of grapes per year (less than 2.5t/ha). Moreover, some of these vineyards are situated at altitudes as high as 900 meters above sea level. The Vineyards have a surface layer of small-sized river gravel, the soils are sandy, with some layers of clay and fluvial sediment. Both the soils and the climate are perfect for growing grapes, as the soils are very good at retaining water during the hot summer season, while the temperature changes help the grapes to achieve a superb ripeness and acidity.
The Bodegas y Viñedos Shaya winery crafts all of its wines from meticulously selected Verdejo grapes. Furthermore, all of Bodegas Shaya’s wines are either fully or partially fermented in barrels and stays with the lees in its entirety for several months before being bottled. These wines are some of the best expressions of the Castilian terroir.
The wines are produced under the supervision of the Australian winemaker Belinda Thomson.
