Description;
From the “Im Weingebirge” terroir, in Wachau, Austria, this cult Riesling, of rare depth, illustrates another piece of the absolutely unique history of Winegut Nikolaihof. The grapes are pressed here in an extraordinary way: they pass through what is certainly the oldest and largest wooden press still in use on the planet, a basket press articulated around an oak structure of more than 12 meters length, cut and assembled more than 350 years ago! A unique and very slow pressing (more than 10 hours) which certainly contributes to giving this Riesling its density, its depth, its absolutely irresistible full texture. Faithful to their very extensive (and quite unique) approach to maturing in foudres, Nikolaus Saahs then quietly let the wine develop a patina in an old 2000-litre cask for nearly 6 years. De wine is designated Wachau DAC.
Tasting Notes;
The wine is clear and golden. The nose is refined and vibrant with hints of acacia, lime blossom, cut grass, sage, lemon balm, medicinal herbs, fennel, white peach, apricot, apples, lemongrass, candied lemon peel, orange marmalade and ginger. The palate is pure and with minerality, the acidity gives tension and length to the wine, pronounced notes of yellow and white fruits, lightness of delicate floral and herbaceous nuances and a long finish.
Food Pairings;
A Riesling of this calibre deserves a spider crab tartare with lemon caviar, gnocchi with sage, roasted sea bass with citrus butter or seared langoustines topped with a tarragon jus.
